Capsicum Rice / Pulav

🍚 2/3 cup Basmati Rice (long-grained rice)


🌶️ 3/4 cup sliced Capsicum (bell pepper)


🛢️ 1½ tablespoons Oil


🌿 1 teaspoon Cumin Seeds


🌸 2 Cloves


🌱 1 Green Cardamom


🍂 1 small piece of Cinnamon


🍃 1 Bay Leaf


🧅 1 medium Onion, chopped or sliced (approx. 1/3 cup)


🥄 1/4 cup Curd (plain yogurt), optional


🌶️ 1/2 teaspoon Red Chilli Powder, optional


🌿 1 teaspoon Coriander Powder, optional


💧 1 1/3 cup Water


🌿 2 tablespoons chopped Coriander Leaves or Mint leaves for garnishing



   Instructions


1: Wash the rice thoroughly and soak them in water for 20 minutes.


2: Heat oil in a pressure cooker or a pan. Add cumin seeds, cloves, green cardamom, cinnamon, and bay leaf. Sauté for a few seconds.


3: Add finely chopped onion and sauté until it turns light pink.


4: Add sliced capsicum and salt. Saute for 2-3 minutes.


5: Mix well and sauté for an additional 2-3 minutes.


6: Add soaked rice and saute for 2 minutes.


7: Add plain curd, red chilli powder, and coriander powder. Mix well and cook for a minute.


8: Add water and salt. Mix well.


9: Close the cooker with a lid and cook for 2 whistles over medium flame. If using a pan, bring the mixture to a boil, cover with a lid, and cook for 10-12 minutes over low flame without opening the lid.


10: Turn off the flame. Allow the pressure to come down naturally. Open the lid and fluff the rice with a fork.
